INGREDIENTS
4 salmon filets
olive oil
Seasoning Mix:
1 Tbsp paprika
2 1/2 tsp salt
1 tsp onion powder
1 tsp garlic powder
1/4 tsp ground red pepper (cayenne)
1 tsp black pepper
1/2 tsp dried thyme leaves
1/2 tsp dried oregano
Mango Salsa:
1 mango, cubed
1 avocado, cubed
1/4 cup red onion, finely diced
2 Tbsp fresh cilantro, chopped
2 Tbsp lime juice
1/2 Tbsp olive oil
1/2 tsp salt
DIRECTIONS
1. Heat large skillet on medium-high heat. Combine seasoning mix in a small bowl. Rub each fillet with olive oil then sprinkle seasoning mix generously and evenly on both sides of the fillets. Place in hot skillet and cook for about 5 minutes on each side.
2. Toss all ingredients for salsa together and serve on top of the salmon.
Serving recommendation: rice and black beans.
